Spring Green Salad with Jalapeno Seasoned Pistachio Kernels

It’s spring and now is the time to lighten up your load and enjoy the fresh foods in season.  

This salad has it all. Made of cabbage, fennel, fresh herbs, celery, apple and Setton Farms Jalapeno pistachios for the perfect crunch.  Leftovers are even better!

  • ½ green cabbage sliced thin

  • 1 bulb of fennel sliced thin

  • ½ cup Setton Farms Jalapeno Seasoned Pistachio Kernels chopped

  • 3 green onions chopped

  • 3 stalks of celery chopped

  • 1 green apple sliced thin

  • ½ bunch fresh mint chopped

  • ½ bunch fresh cilantro chopped

For the Dressing:

  • ⅓ cup olive oil

  • 2 tablespoons fresh lemon juice

  • Salt to taste


  1. Add all the salad ingredients in one bowl. 

  2. Add the olive oil, lemon juice and salt and whisk.

  3. Pour dressing over salad and serve immediately or refrigerate.  The salad holds well as leftovers.
