High Protein Blueberry Tofu Pudding or Ice Cream

This is one of those recipes that checks every box. It’s simple, naturally sweet, high in protein, and feels like a treat while still supporting your goals.
Perfect for when you want something cold and creamy but don’t want the crash that comes with typical desserts.
What I love about this is how easy it is. A few real ingredients, no added sugar, and it keeps well so you always have something good in the fridge.
Ingredients
2 cups frozen wild blueberries
1 block silken tofu, steamed
2 pitted dates
2 teaspoons vanilla extract
Directions
Steam the tofu and let it cool slightly.
Add the tofu, blueberries, dates, and vanilla to a high powered blender or food processor.
Blend until completely smooth and creamy.
Transfer to a container and chill for a few hours until set.
If you want to take it a step further and make it more like a dessert, use your Ninja Creami.
Blend all ingredients, pour into the Creami container, freeze overnight, then spin on the light ice cream setting. It turns into a thick, creamy, ice cream style treat.
