Homemade Hummus Recipe- No Chickpeas Required- High Fiber, Low Carb and SO GOOD!


Ingredients:

  • 1 large head cauliflower, cut into florets

  • 2 cloves garlic, in peels

  • 1/4 cup tahini

  • 1/4 cup lemon juice

  • 1/2 tsp cumin

  • 2 tbsp avocado or olive oil

  • 1/4 cup water

  • 1 tsp salt and pepper, to taste


Directions:

  1. Preheat oven to 375°F. Line a baking sheet with parchment.

  2. Toss cauliflower and garlic cloves with olive oil, salt + pepper.

  3. Roast for 40 mins, stirring halfway.

  4. Peel garlic, then blend all ingredients until smooth, adding water slowly.

  5. Store in fridge up to 5 days.

  6. Serve with veggies, chips, or fruit slices!
