Cottage Cheese Spinach Egg Bake

Dish: Standard 8x8 inch Pyrex baking dish
Ingredients:
Cooking spray (avocado or olive oil)
4 packed cups baby spinach (about 4 ounces)
1-2 cups low-fat cottage cheese
4 large eggs
1/4 teaspoon red pepper flakes (or to taste)
1/4 cup grated Parmesan cheese (or cheese of choice)
Salt and pepper to taste
Directions:
Preheat oven to 350°F.
Lightly spray an 8x8 inch Pyrex dish with avocado or olive oil spray.
Fill the dish with spinach, pressing down slightly so it’s evenly spread.
Add the cottage cheese and crack the eggs directly over the spinach.
Sprinkle in red pepper flakes, salt, and pepper.
Mix well until everything is evenly combined.
Top with Parmesan cheese or your favorite shredded cheese.
Bake for 15–20 minutes, until the top is lightly browned and set in the center.
